One Pot Breakfast Potatoes

You can never go wrong with potatoes for breakfast. You know what else you can never go wrong with? Bacon. Now, potatoes with bacon is a home run (the third hit being some flavorful caramelized onions). I'm keeping this intro short and sweet, because the food can do the talking.



With A Lil' Twist's One-Pot Breakfast Potatoes
Prep Time: 5 Minutes / Cook Time: 30 Minutes / Serving Size: 4-6

Ingredients:
  • 4-5 Medium Sized Russet Potatoes
  • 1 Yellow Onion, Chopped
  • 4-5 Slices of Black Pepper Thick Cut Bacon (or whatever you have in your fridge)
  • 1 Tbsp Butter
  • Salt and Pepper
Directions:

Slice the bacon into 1/2 pieces. Place in non-stick pan over medium-low heat. 



Chop the onions into 1/4 inch pieces. Place in pan with bacon.



While the bacon and onions cook, peel and chop the potatoes into 1/4 inch pieces. Stir the bacon/onion mixture every few minutes.

Once bacon and onions brown and get crispy (and good and delicious and everything wonderful), remove from pan to a paper towel-lined plate.


Place the pan back on the stove and amp up the heat to medium-high. Place the potatoes into the pan. Do not drain the bacon grease (that is what gives the potatoes extra, extra flavor). Place butter in with the potatoes (a lot of potatoes need a lot of flavor). Season liberally with salt and pepper.


Let brown and get crispy on all sides of the potato. Takes about 10-12 minutes.

 Once potatoes are browned, add back the bacon and onions. Cook for an additional 3-5 minutes. Season with salt and pepper (if necessary) and you're done!



Serve with some delicious eggs and you have yourself a pretty darn good breakfast. Or lunch. Or dinner.
