Panko + Parmesan Baked Asparagus "Fries"

Something I love seeing on Pinterest are all of renditions of "fries" people come up with. Carrot fries...zucchini fries...and now, I've made asparagus fries. These tasty spears give you that same satisfying crunch without all of the calories and I am completely obsessed with them. They are perfect as a side dish or on their own (but to tell you the truth, you probably won't want to share!).





Panko + Parmesan Baked Asparagus "Fries"
Prep: 10 Minutes / Bake: 15-18 Minutes / Serving Size: 3-6

Ingredients:

  • 1 Lb. Asparagus
  • 1/2 Cup Parmesan
  • 1/2 Cup Panko Bread Crumbs
  • 1/4 Tsp Salt
  • 1/8 Tsp Pepper
  • 1/2 Tsp Garlic Powder
  • 1/4 Cup Extra Virgin Olive Oil
Directions:
Preheat the oven to 350 and line a baking sheet with foil.

Clean and trim the asparagus by snapping the ends off.

Pour the Parmesan and Panko into a bowl.


Add in the salt, pepper and garlic powder and mix.



Pour in the olive oil into another bowl.

Make an assembly line and roll the asparagus in the olive oil and then into the panko/parmesan mixture. Place on the foil-lined baking sheet.



Place tray on the middle rack and bake for 15-18 minutes, until golden and crispy. Take out and let cool for five minutes. Use tongs to place on serving plate.
