Zucchini Crust Pizza

My friend Therese told me about making pizza with a zucchini crust. I thought it was an amazing idea. I've seen, on Pinterest, pizza with a cauliflower crust, and thought this zucchini version was a perfect and delicious lil' twist. So, below is directions to a tasty, guilt-free version of a pizza, with the ability to make it whatever kind you'd like!



Zucchini Crust Pizza
Time: 1 Hour 

Ingredients:
  • 2 Zucchini 
  • 1/2 Cup Shredded Mozzarella
  • 1/4 Cup Grated Parmesan
  • 1 Tsp Dried Oregano
  • 1 Tsp Granulated Garlic
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 1 Egg
  • 1/2 Large Onion, Diced
  • 1 1/2 Tbsp Olive Oil
  • 1 28 Oz. Can of Pureed San Marzano Tomatoes
  • 1 Tsp Dried Basil
  • 1/2 Tsp Sugar
  • 1 Tsp Granulated Garlic
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 7-8 Slices of Fresh Mozzarella
  • 7-8 Basil Leaves
Directions:
Preheat the oven to 450 degrees.

Grate the zucchini. Wrap in kitchen towel to squeeze out any excess liquid. Place in bowl.


Mix in shredded mozzarella, parmesan, dried oregano, granulated garlic, salt, pepper and egg to the bowl. Mix altogether with a fork.




Place parchment paper or a baking mat on a baking sheet. Form a circle with the zucchini mixture and bake for 20-25 minutes.

While the crust bakes, heat olive oil in a sauce pan over medium heat. Once heated, place the onions and cook for 2-3 minutes, until translucent. 

Pour in the pureed tomatoes.

Add the dried basil, sugar, granulated garlic, salt and pepper. Lower to medium-low heat and let simmer for 10-15 minutes.



Once the crust has baked take out and spread a layer of the tomato sauce.


Place the mozzarella on the pizza and place back in oven and let cook for and additional 10-15 minutes, or until the mozzarella is nice and bubbly.While the pizza cooks, chiffonade the basil. 



Take out the pizza once done. Garnish with basil. 


Slice up and serve!

  1. I've heard about cauliflower crusts but not zucchini..until now. I've been having pizza cravings and this is a great way to satisfy that craving without feeling guilty! Thank you for sharing, looks delicious!
