Miso & Grapefruit Salmon
Prep Time: 10 Minutes / Idle Time: 30 Minutes - 1 Hour / Cook Time: 8-9 Minutes
Ingredients:
- 1/4 Cup Mild Yellow Miso
- Juice of 1 Large Grapefruit or 1/2 Cup
- 2 Tbsp Rice Vinegar
- 1/2 Cup Ginger Miso Broth (Vegetable Broth is fine too)
- 1 Tbsp Sesame Oil
- 1 Tbsp Light Brown Sugar
- 1 Scallion
- 3 Garlic Cloves
- 1 Tbsp Fresh Ginger, Minced
- 1/2 Tsp Turmeric
- 1/2 Tsp Salt
- 1/2 Tsp Cayenne
- Four 6 Oz. Salmon Fillets (No Skin)
- 2 Tbsp Butter
Directions:
Place the miso in a bowl.
Juice the grapefruit and add to bowl. Add the ginger miso broth (or vegetable broth) to bowl.
Add the rice vinegar, sesame oil and light brown sugar to bowl.
Mince the garlic cloves.
Thinly slice the green onion and mince the fresh ginger. Add to bowl.
Add the turmeric, salt and cayenne to the bowl.
With a whisk, mix the miso sauce together.
Place the salmon into containers with lids and pour the mixture on top. Flip the salmon to make sure everything is covered.
Cover and let marinate in the fridge for 30 minutes to 1 hour.
Turn broiler on high.
Cover a baking sheet with oil and spray with non-stick spray.
Shake any green onion off of the salmon and place salmon on baking sheet.
Place on the middle rack and cook for 8-9 minutes.
While the salmon cooks, place the marinade into a sauce pan and heat over medium-low heat. Add butter and stir. Once butter has melted, lower heat to low and let simmer until the salmon is done.
Once the salmon is finished, take out of oven and let rest for 5 minutes.
Plate and pour the sauce over the salmon. Serve!
