Miso & Greek Yogurt Green Beans

I've been thinking about this recipe a lot. I was at a Chinese restaurant a few weeks ago and we ordered the Szechuan green bean dish and I was thinking how I could twist this up. Miso has also been on my mind (thoughts of a food blogger), so I thought that miso green beans would be a no-brainer. Add in a little nonfat Greek yogurt and voila - you have yourself a delicious side dish that's lean on calories. These green beans are addictive - serve with your favorite fish or chicken and your weekday night just got a lot better.





Miso & Greek Yogurt Green Beans
Time: 15 Minutes / Serving Size: 4

Ingredients:

  • 1/2 Cup Slivered Almonds
  • 1 Garlic Clove
  • 1/2" Peeled Ginger
  • 2 Tbsp Mild Yellow Miso
  • 3 Tbsp Nonfat Greek Yogurt
  • 1 Tbsp Sesame Oil
  • 1/2 Tsp Garlic Powder
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Olive Oil
  • 1 Lb. "Ready to Use" Green Beans, Microwaved or Steamed Al Dente
Directions:
In a dry non-stick pan, lightly toast the almonds over medium heat for five minutes, shaking the pan frequently. Pour in bowl and set aside.

Mince the garlic and ginger.


In a bowl, add in the miso, Greek yogurt, sesame oil, garlic powder and soy sauce.





Whisk until smooth.

In a large non-stick pan, heat olive oil over medium-high heat. Add garlic and ginger and cook for 2 minutes.


Add in green beans and stir. Pour in miso mix. Cook for 5 minutes.



Add in almonds and stir.

Plate and serve!
