{Skinny} Asian Coleslaw with Peanut Powder Dressing

At every family gathering, we order the most delicious Asian coleslaw with peanut dressing. It's so good that I couldn't wait until the next gathering to have this dish and decided to make my own with a "skinny" lil' twist by utilizing my newest obsession: peanut powder. It's pretty much peanut butter in a powder form, and all you need to do is add water and voila! peanut butter with half the calories! This coleslaw is perfect for all of those summer BBQ's and is sure to be hit with all of your hungry gatherers! Enjoy!





{Skinny} Asian Coleslaw with Peanut Powder Dressing
Time: 30 Minutes / Serves: 6-10

Ingredients:

  • 2 Tbsp Peanut Powder
  • 1 Tbsp Water
  • 3/4 Cup Rice Vinegar
  • 1/4 Cup Sesame Oil
  • 1 Tbsp Toasted Sesame Oil
  • 1 Tbsp Honey
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 1/2 Large Purple Cabbage
  • 1/2 Large Green Cabbage
  • 3 Large Carrots, Peeled
  • 2 Stalks Green Onion, Thinly Sliced
  • 1 Handful of Cilantro, Chopped
  • 1 Cup Peanuts
Directions:
In a mason jar, combine the peanut powder, water, rice vinegar, sesame oils, honey, salt and pepper. Place lid on the jar and shake well. Let sit in fridge for 15 minutes.




Slice the cabbage into very thin strips. Place in a large bowl.


Grate the carrots into strips. (Use the larger-holed side of the grater.) Add to bowl. 


Slice the green onions and chop the cilantro and add to bowl.


Place the peanuts in a dry pan and toast on medium heat for about 5 minutes, shaking the pan so the peanuts don't burn. Once they are golden, transfer to bowl.

Take the dressing out of the fridge and pour in half. Mix the coleslaw altogether. Pour more dressing until desired coating has been reached.


Place in a serving bowl and garnish with cilantro and peanuts! Serve and enjoy!
