Skinny Chicken Salad

I love chicken salad but I don't love the calories that accompany it. I usually try to avoid dousing anything with mayonnaise. So, I present you a healthy chicken salad option. And in my opinion, I think this tastes way better. Using Greek yogurt, avocado and lemon makes a perfect creamy alternative and gives the chicken salad a very fresh taste. Perfect for lunch for kids and adults and simple to make when using a store bought rotisserie chicken!





Skinny Chicken Salad
Time: 40 Minutes / Serving Size: 6-8

Ingredients:

  • 1 Whole Seasoned Rotisserie Chicken
  • 2 Pieces Fresh Corn on the Cob
  • 1 Tsp Salt
  • 1/2 Lb. Ready to Eat Green Beans
  • 1/2 Lb. Grape Tomatoes
  • 1/2 Cup Pistachios, Shelled
  • 1 Cup Nonfat Greek Yogurt
  • 2 Avocados
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/2 Lemon, Juice and Zest
Directions:
Fill a large pot with water. Place over high heat and bring to a boil.

As the water heats up, remove the husk and strings from the corn. Once the water starts to boil, add salt and place corn in the pot. Cover the pot and bring the water back to a boil. Once boiling, turn off heat and let corn boil for 5 minutes. Remove and place on plate.


Take all of the meat off the store bought rotisserie chicken and shred with two forks. (I would suggest using clean hands to really dig out all of the meat and shred that way.)


Place the meat in bowl. 
I'm serious about taking off all of the meat from the chicken.

Heat the ready to eat green beans in the microwave following the directions on the bag. Cut into 3/4 inch pieces. Add to bowl.

Once the corn has cooled a bit, cut the kernels off the cob with a sharp knife. Add to bowl.


Slice the grape tomatoes in half. Add to bowl.

To start on the dressing, half the avocados and dice them in the skin. Spoon it out and into a bowl. Add salt and pepper.


Take a fork and smash the avocado until it's paste-like.

Add Greek yogurt and mix until incorporated.

Add the zest and lemon to the mixture. Mix together.



Pour the dressing into the bowl with the chicken.

Add in pistachios.

Mix everything together with a rubber spatula or wooden spoon.

Place in serving bowl and eat solo or make into a Chicken Salad Sandwich!
