Crockpot {Slowcooker} Chicken + Corn Tacos

Around LA (southern California in general) people love their Mexican food, and I am no exception. There's something very comforting about digging your mouth into a mixture of flavorful meat, cilantro, guacamole, salsa and cheese. Mouthwatering, I know. So to give a nod to the famous "Taco Tuesday" (yes, yes I know it's Wednesday, but this is just for your records for next week) I've slowcooked some very flavorful chicken with roasted corn and roasted salsa, as well as a spicy homemade seasoning. What's even better about this recipe, besides the outcome, is that it's easy. Throw it all in a crockpot in the morning, and come home from whatever you do all day (work, school, meandering) and not only will you come home to deliciousness, but you'll smell it the second you walk in your door.





Crockpot {Slowcooker} Chicken + Corn Tacos
Serving: 4 / Prep Time: 10 min / Cook Time: 6-8 hours
Appliances needed: Crockpot
Note: if cooking longer than 8 hours on low add chicken broth

Ingredients:

  • 6 Frozen Chicken Tenders or 2 Frozen Chicken Breasts
  • 1 Cup of Frozen Roasted Corn (I buy the package from Trader Joe's)
  • 1 Cup of Roasted Salsa
  • 1/4 tsp Paprika
  • 1/4 tsp Cayenne
  • 1/4 tsp Red Chili Pepper
  • 1 tsp Ground Cumin
  • 1 1/2 tsp Garlic Powder
  • 1 tsp Garlic Salt
  • 1 Garlic Clove, minced
  • Taco Fixings (cheese, sour cream, onions, cilantro, tomatoes, guacamole, lime)
  • Chicken Broth (optional)
Directions:

Place the frozen chicken on the bottom of the crockpot. 

Pour one cup each of corn and salsa into the crockpot.



Mix all of the seasonings together and mince garlic. Add to pot.


Mix it all together and you're done with the prep! Cook it on low for 6-8 hours or high for 4 hours. 

After it has been cooking on low (or high) take two forks and shred the chicken (it should shred really easily). 

Change the crockpot to "Warm" and cover while you prep the taco fixings. 

Once everything is prepped and ready to go, start assembling your tacos! I'm a fan of soft tacos and to keep it on the healthy side I made a lettuce-based taco (since the chicken is so flavorful, you won't even be able to tell it's healthy!). 



This won't do Taco Tuesday wrong and when you bite into it, there's a little kick of spice from the delicious homemade seasoning. Enjoy!
