Quinoa Fried Rice

Quinoa Fried Rice isn't a new concept. I've seen it all over Pinterest and I had to check it out. After reviewing countless recipes, I decided to just swing it and make my own because (1) I didn't have teriyaki sauce laying around the house and (2) I'm obsessed with fried rice and know what I like and don't like in it. It. Is. Amazing. This recipe makes a lot. It can feed as many as eight or last you multiple days for breakfast, lunch and dinner (aka what I did). Something that I think is key for this recipe to really be as elevated as it is is the chicken boullian powder (this means that you need to not skip this step). Anyways - I urge you to make this as soon as possible because it's too delicious not to try!





Quinoa Fried Rice
Prep Time: 30 Minutes / Cook Time: 8 Minutes / Serving Size: 8

Ingredients:

  • 1 1/2 Cup Uncooked White Quinoa
  • 3 Cups of Water
  • 3 Tsp of Chicken Bouillon Powder
  • 2 Medium Carrots
  • 1/2 White Onion
  • 3 Garlic Cloves
  • 2 Stalks Green Onion
  • 1 Cup Frozen Peas
  • 1/4 Cup Low Sodium Soy Sauce
  • 2 Tbsp Sesame Oil
  • 1 Tsp Toasted Sesame Oil
  • 1 Tbsp Extra Virgin Olive Oil
  • Slivered Green Onions for Garnish (Optional)
Directions:
Rinse the quinoa with cold water. Place in pot and add water and chicken boullian powder. Bring to boil, once boiling turn down to simmer and cover. Cook for ~15 minutes or until light and fluffy.


Place in fridge to let cool completely.

In a measuring cup, pour in soy sauce, sesame oil and toasted sesame oil. Mix and set aside.




Prep the vegetables in separate bowls. Important: cooking the quinoa fried rice is a quick process and you'll need everything organized.

Peel and clean the carrots. Cut them in half and then in thirds to dice into small pieces. Place in small bowl.


Take the half onion and cut them into small dices. Place in small bowl.


Mince the garlic and place in small bowl. Thinly slice the green onions and place in bowl.


Place frozen peas and two eggs in separate bowls.

Heat a large nonstick pan over high heat. Add extra virgin olive oil.

Add carrots and onions. Cook for two minutes while stirring frequently.

Add in garlic and green onion. Cook for 2 minutes.


Add in the quinoa and pour in soy sauce mixture. Stir.


Make a well in the middle of the quinoa. Add in eggs and scramble.

Add in frozen peas and stir for 2 minutes. 

Serve in platter and it's ready to eat! Garnish with green onions (optional).

  1. Do you have any recommendations for a substitute for chicken bouillon? My girlfriend is a vegetarian and I really want to make this for us!
